Friday Lunch - Quesedilla (May 21)

Leftovers!
I had some beans and rice leftover, so I made a quick quesedilla, adding grilled peppers and onions. Topped with some Tofutti Sour Cream, it made a fast, delicious lunch that even the kids enjoyed.

    I highly recommend getting an enameled cast iron grill for all your quick veggie cooking. You can even brown thin slices of tofu (to make bacon) with just oil spray - no sticking. Bed, Bath, and Beyond has one for $50, plus the 15% off coupon you get in the mail. Go on their site and search 'reversible grill.' The thing is totally awesome and cooks near anything without sticking...veggie burgers, quesedillas, tofu, veggies, seitan...
